Mustard Grilled Turkey Breasts

Prep: 10 min, Cook: 10 min.

2 Tbs. Dijon mustard
2 cloves garlic, minced
1/2 tsp. rosemary
1/4 tsp. pepper
1 Tbs. virgin olive oil
4 4 ounce turkey breast fillets

Prepare grill or broiler. Combine all ingredients, except turkey, in a jar with a tight fitting lid. Shake vigorously. Grill or broil turkey breasts 4 minutes per side. Spread half the mustard mixture over one side of turkey breasts and grill or broil 3
minutes. Turn and coat with remaining mustard mixture. Broil another 3 minutes or until turkey is cooked throughout.

Lowfat Parsnip and Potato Casserole

Prep: 15 min, Cook: 30 min.

1/2 lb. parsnips, peeled and chopped
1/2 lb. russet potatoes, peeled and chopped
1/4 cup fat-free Swiss cheese, grated
1 Tbs. grated Parmesan cheese
2 Tbs. evaporated skim milk
2 tsp. unsalted butter, softened
2 Tbs. parsley, chopped

Preheat oven to 375F. Place parsnips and potatoes in a steamer basket over boiling water. Cover saucepan and steam
10-12 minutes or until tender. Drain and return vegetables to pan. Mash well. Stir in next 5 ingredients. Season with salt and
pepper to taste. Pour mixture into a buttered baking dish. Bake 20 minutes until mixture is bubbly.

Honey Strawberry Tart

Prep: 10 min, Cook: 10 min.

1 ready-made pie crust
1/3 cup honey
1 Tbs. lemon juice
4 cups strawberries, hulled and halved
sprigs fresh mint (optional)

Bake pie shell according to package directions. Combine honey and lemon juice in a bowl and mix well. Just before serving, brush bottom of prepared pie shell with honey mixture. Fill shell with strawberries and drizzle remaining honey mixture over fruit. Serve garnished with mint sprigs, if desired.

This recipe serves 8 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in
multiples of 8.
